Elderberry Parfait (for breakfast or dessert!)

This is our version of an Elderberry Parfait. It is a decadent breakfast and a delicious dessert.
The recipe only takes a few minutes to put together and works just as well too if you substitute Elderberry with Rosehip & use Honeysuckle/Dandelion or Gorse Flower Shrub

What you need:

  • 16 oz honey or vanilla flavoured Organic Greek Yogurt (you can use any of our Wild Pots to flavour plain yogurt)
  • 12 ripe strawberries, washed, trimmed and sliced thin
  • 20 ripe blackberries, washed
  • 7 Tablespoons of our Elderberry Syrup
  • 2 teaspoons of our Sloe or Wild Blackberry Shrub

Method:

Gently heat the Elderberry Syrup over very low heat, stirring frequently. When the syrup is heated, add the shrub and stir well to blend the flavours. Place prepared fruit in a medium sized bowl, drizzle the syrup/shrub glaze over the fruit, and mix well.

Select 4 wine glasses or champagne flutes and carefully place a dollop (about 2 or 3 tablespoons) of Greek Yogurt in the bottom of each glass. Add several tablespoons of the glazed fruit and syrup to each glass, and continue to layer the yogurt and glazed fruit, finishing with the fruit. Try to use up every bit of glaze in the process, as you don’t want to miss a single drop! Chill in fridge for a bit before serving

This makes 4 medium-sized parfaits.
